This vinegar makes a lovely dressing for all your summer salads. Add it to barbeque marinades, drizzle over fruit salad and ice cream. Use to deglaze pans after frying meat or vegetables.

Strawberries and Raspberries are truly divine summer fruits, beautiful in both appearance and taste. We always have a small supply growing in the garden but for this vinegar, we ‘picked our own’ at local farm Bentley Grange and Spillmans near York. With so much sweetness in the fruit the fermentations were vigorous and filled the room with the smell of summer.
The finished vinegar has a strong presence of the base ingredients both in aroma and taste with a lovely balance of sweet and sour. It’s delicious added to griddled courgettes, or used to make a sauce for mackerel or white fish.
