Calabria (the “toe” of the boot-shaped Italian peninsula) is famed for its cuisine featuring fiery chillies, fennel seeds, and pork. These flavours are united in the creation of our Spicy Sausage Ragu, made from the pork of the famed black pigs of Calabria, reared in the Pollino mountains under strict animal welfare standards, along with locally sourced fennel seeds and chillies to add just the right amount of heat.
The taste is enhanced by the addition of white wine, extra virgin olive oil, rosemary and onions. We hope you enjoy it as much as we do! We suggest pairing it with a plain pasta of your choice, topped with a generous sprinkle of Parmigiano Reggiano.
