It is a dish that used to be kept for Special Occasions but is now more widely cooked.
The best way to enjoy a kalia is when it is slow cooked, and with the addition of yoghurt and almonds, it will have a rich and unique flavour.
A Mauritian Kalia Spice Blend has no turmeric in it and has more of a light brown colour.
It is not a curry, nor a tagine and the best way to describe the flavours, are unctuous and creamy.
I enjoy a Chicken and Egg Kalia with Saffron rice and Roti.
Jackfruit is absolutely delicious in this dish.
