We are a husband and wife duo who have perfected our premium artisan chorizos over the last year. We are quite unique in that we make our premium artisan chorizos in our kitchen at home and we are not farmers. We were ready to sell just as the lock down came in, not the best time to start a business! However, we carried on selling on line, locally and eventually attending Farmer's and Artisan markets where our product sold out. We use only local ingredients where possible (however, Spanish smoked paprika is the best) and our free range pork is reared locally and bought from a local butcher. We keep to my husband's Spanish family recipe for our chorizos, adding a starter culture (think yogurt or cheese) to ferment the chorizos. We do not add preservatives or additives.
